Ingredients
- 4 cups diced potatoes
- 1 onion, chopped
- 2 cups vegetable broth
- 1 cup heavy cream or milk
- Salt and pepper to taste
- Optional: shredded cheese for garnish
Instructions
- In a large pot, sauté the chopped onion until translucent.
- Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
- Use an immersion blender to puree the soup to your desired consistency.
- Stir in the cream or milk, and season with salt and pepper to taste.
- Serve hot, optionally garnished with shredded cheese.
Notes
For a thicker soup, blend it longer or use less broth. Add herbs like thyme or parsley for extra flavor. For a smoky flavor, consider including bacon or ham.
