Ingredients
- 1 cup corn kernels (fresh or frozen)
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg
- 1/4 cup milk
- Oil for frying
- Applesauce or syrup for serving
Instructions
- In a mixing bowl, combine corn kernels, flour, cornmeal, baking powder, salt, and pepper.
- In another bowl, whisk together the egg and milk.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the mixture into the hot oil and cook for 2-3 minutes on each side until golden brown and crispy.
- Remove and drain on paper towels.
- Serve warm with applesauce or syrup.
Notes
For a cheesy twist, add shredded cheese to the batter or include diced bell peppers for extra flavor. Store leftovers in an airtight container for up to 3 days.
