Description

Crispy on the outside and tender on the inside, these corn fritters are a delightful snack or side dish, perfect for any occasion.


Ingredients

  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg
  • 1/4 cup milk
  • Oil for frying
  • Applesauce or syrup for serving


Instructions

  1. In a mixing bowl, combine corn kernels, flour, cornmeal, baking powder, salt, and pepper.
  2. In another bowl, whisk together the egg and milk.
  3. Add the wet ingredients to the dry ingredients and mix until just combined.
  4. Heat oil in a frying pan over medium heat.
  5. Drop spoonfuls of the mixture into the hot oil and cook for 2-3 minutes on each side until golden brown and crispy.
  6. Remove and drain on paper towels.
  7. Serve warm with applesauce or syrup.

Notes

For a cheesy twist, add shredded cheese to the batter or include diced bell peppers for extra flavor. Store leftovers in an airtight container for up to 3 days.
