Description
Crispy and delicious zucchini fritters that make use of those sad zucchinis in your fridge.
Ingredients
- 2 medium Zucchini (approximately 4 cups grated)
- Salt (for drawing out water)
- 2 Eggs
- 1/2 cup All purpose flour (add more if needed)
- 1/3 cup Parmesan (optional)
- 1 to 2 cloves Garlic (minced)
- 2 to 3 tablespoons Green onion or chopped onion
- Black pepper (to taste)
- Oil for frying (olive oil or any neutral oil)
Instructions
- Grate the zucchini using a box grater.
- Salt it and let it sit for 10 minutes.
- Squeeze out the water.
- Mix the batter: combine zucchini, eggs, flour, parmesan, garlic, onion, and pepper.
- Fry in a skillet over medium heat until golden and crisp, about 3 to 4 minutes per side.
- Drain on paper towels and repeat with remaining batter.
Notes
For extra crispiness, make sure to squeeze out excess water from the zucchini.
