Zucchini Fritters

Description

Crispy and delicious zucchini fritters that make use of those sad zucchinis in your fridge.


Ingredients

  • 2 medium Zucchini (approximately 4 cups grated)
  • Salt (for drawing out water)
  • 2 Eggs
  • 1/2 cup All purpose flour (add more if needed)
  • 1/3 cup Parmesan (optional)
  • 1 to 2 cloves Garlic (minced)
  • 2 to 3 tablespoons Green onion or chopped onion
  • Black pepper (to taste)
  • Oil for frying (olive oil or any neutral oil)


Instructions

  1. Grate the zucchini using a box grater.
  2. Salt it and let it sit for 10 minutes.
  3. Squeeze out the water.
  4. Mix the batter: combine zucchini, eggs, flour, parmesan, garlic, onion, and pepper.
  5. Fry in a skillet over medium heat until golden and crisp, about 3 to 4 minutes per side.
  6. Drain on paper towels and repeat with remaining batter.

Notes

For extra crispiness, make sure to squeeze out excess water from the zucchini.
