A classic Thai dessert made with glutinous rice, coconut milk, sugar, and fresh mango, resulting in a chewy, sweet treat perfect for any occasion.
Ingredients
- 1 cup glutinous rice (sticky rice)
- 1 cup coconut milk (full fat)
- 1/4 cup granulated sugar (or palm sugar)
- 1/4 teaspoon salt
- 2 ripe mangoes, sliced
- 1 tablespoon cornstarch (optional, for thickening sauce)
- Toasted sesame seeds or mung beans (optional topping)
Instructions
- Rinse the sticky rice under cold water a few times until the water runs clear.
- Soak the rice in water for at least 4 hours, or overnight.
- Cook the soaked rice using a steamer basket over simmering water for 20-30 minutes until tender.
- Warm the coconut milk with sugar and a pinch of salt in a pot until sugar dissolves.
- Soak the cooked rice in most of the coconut sauce for 15-20 minutes.
- Slice the mango and serve with the coconut sticky rice, drizzling with any remaining sauce and optional toppings.
Notes
Do not skip the soaking step; it ensures the rice cooks evenly. Use ripe mangoes for the best flavor.
