Description

A crunchy and satisfying twist on the classic Caesar salad, featuring hearty kale and a quick, flavorful dressing.

Ingredients

  • 1 bunch kale (curly or lacinato)
  • 1/2 cup Parmesan cheese (shaved or grated)
  • 1 cup croutons (store-bought or homemade)
  • Protein of choice (chicken, shrimp, or chickpeas)
  • 1/2 cup mayonnaise or Greek yogurt
  • 3 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic (minced)
  • 1 teaspoon anchovy paste (optional)
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup olive oil
  • Black pepper (to taste)
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon smoked paprika

Instructions

  1. Prep the kale by pulling leaves off the stems and tearing or chopping into bite-sized pieces.
  2. Wash and dry the kale thoroughly, then massage with a pinch of salt and a drizzle of olive oil for 1-2 minutes.
  3. Make the dressing in a bowl; combine mayo or yogurt, lemon juice, Dijon, garlic, Worcestershire sauce, and black pepper. Whisk in olive oil gradually.
  4. Taste and adjust seasoning as needed; add honey for sweetness or more lemon for acidity.
  5. Toss the kale with the dressing in a large bowl until well coated.
  6. Add Parmesan cheese and protein of choice, mixing gently.
  7. Top with croutons just before serving to maintain their crunch.
  8. Enjoy your satisfying Kale Caesar Salad!

Notes

For make-ahead tips, prepare kale and dressing ahead of time and store separately. Add croutons right before serving to keep crisp.
