Ingredients
- 1 bunch kale (curly or lacinato)
- 1/2 cup Parmesan cheese (shaved or grated)
- 1 cup croutons (store-bought or homemade)
- Protein of choice (chicken, shrimp, or chickpeas)
- 1/2 cup mayonnaise or Greek yogurt
- 3 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 2 cloves garlic (minced)
- 1 teaspoon anchovy paste (optional)
- 1 tablespoon Worcestershire sauce
- 1/4 cup olive oil
- Black pepper (to taste)
- 1 teaspoon honey or maple syrup

Instructions
- Prep the kale by pulling leaves off the stems and tearing or chopping into bite-sized pieces.
