Description

A comforting Irish dish featuring creamy potato filling in a crispy crust, perfect for family gatherings.

Ingredients

  • 4 large potatoes, peeled and chopped
  • 2 tablespoons butter
  • ½ cup milk
  • 1 cup shredded cheese (cheddar or your favorite)
  • Salt and pepper, to taste
  • 1 egg, beaten (for egg wash)
  • 1 prepared pie crust (store-bought or homemade)
  • Fresh herbs (like chives or parsley) (for added flavor, optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil the chopped potatoes in a pot of salted water until they are tender, about 15-20 minutes.
  3. Drain the potatoes and transfer them to a mixing bowl.
  4. Add butter and milk to the potatoes and mash until smooth. Stir in the shredded cheese, and season with salt and pepper to taste.
  5. If using, mix in fresh herbs for added flavor.
  6. Roll out your pie crust and place it in a pie dish.
  7. Spoon the mashed potato mixture into the pie crust, spreading it evenly.
  8. Cover the pie with another layer of pie crust or leave it open-faced, as you like.
  9. Brush the top with the beaten egg for a golden finish.
  10. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.

Notes

Serve warm with a side salad or steamed vegetables. Leftovers can be stored in an airtight container in the fridge for up to three days.
