Ingredients
- 2 tablespoons olive oil
- 1 small onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 1 to 2 teaspoons cumin
- 1 teaspoon paprika
- Pinch of chili flakes or a little cayenne, optional
- 1 can (28 oz) crushed tomatoes or tomato sauce
- Salt and black pepper to taste
- 4 to 6 eggs
- 1/2 to 3/4 cup feta cheese, crumbled
- Fresh parsley or cilantro, optional
Instructions
- Warm a splash of olive oil in a large skillet over medium heat. Add onion and pepper and cook until they soften, about 5 to 7 minutes.
- Add garlic, cumin, paprika, and chili flakes if using. Stir for about 30 seconds until fragrant.
- Pour in the tomatoes and season with salt and pepper. Let the sauce simmer for 8 to 12 minutes, stirring occasionally, until it thickens.
- Make small dips in the sauce and crack an egg into each. Cover the pan and cook for about 5 to 8 minutes, depending on desired yolk doneness.
- Sprinkle feta over the eggs and let them finish cooking.
- Finish with herbs if desired and serve directly from the skillet.
