Description

Delicious grilled chicken skewers coated in a creamy, sweet and savory peanut sauce. Perfect for weeknight dinners or special occasions.


Ingredients

  • 1 1/2 to 2 pounds chicken thighs or breast, sliced into strips
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar or honey
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger (optional)
  • 1 to 2 teaspoons curry powder (or a pinch of turmeric plus a pinch of cumin)
  • 1 tablespoon neutral oil
  • Salt and pepper to taste
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 to 2 tablespoons brown sugar or honey
  • 1 teaspoon sesame oil (optional)
  • 1/2 teaspoon chili flakes or sriracha (optional)
  • Warm water or coconut milk to thin the sauce


Instructions

  1. Soak wooden skewers in water for at least 20 minutes to prevent burning.
  2. Mix the marinade ingredients and add the chicken strips. Let it sit for at least 20 minutes, preferably 2 to 6 hours.
  3. Thread chicken onto skewers, leaving some space for even cooking.
  4. Grill over medium-high heat for about 3 to 4 minutes on each side until cooked through and slightly charred.
  5. Whisk together the peanut sauce ingredients until smooth, adjusting consistency with warm water as needed.

Notes

Do not crank the heat too high when grilling to avoid burning the marinade. Use thighs for juicier chicken. Adjust the sauce thickness slowly.
