Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- Banana slices for topping
Instructions
- Preheat oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs, mashed bananas, and vanilla extract until well combined.
- Whisk together the flour, baking soda, and salt in a separate bowl. Gradually add to the banana mixture until just combined.
- Drop rounded tablespoons of dough onto ungreased baking sheets.
- Bake for 10-12 minutes or until edges are lightly golden.
- Let cookies cool completely.
- Whip the heavy cream with powdered sugar until soft peaks form.
- Spread a layer of whipped cream on each cookie, top with banana slices, and serve.
Notes
Use ripe bananas for the best flavor and consider chilling the dough if it’s sticky.
