Ingredients

2 pounds beef stew meat (or boneless beef roast, cut in 1-inch pieces)
2 packages dry onion soup mix (1 ounce each)
1/2 teaspoon paprika
1 small yellow onion, chopped
5 medium potatoes, peeled and diced into 1-inch cubes
2 to 3 cups baby carrots (whole or chopped)
2 cans cream of celery soup (10 ounces each)
1 cup ketchup


Instructions

Combine dry onion soup mix and paprika in a large plastic bag. Add beef stew meat, seal, and shake to coat meat evenly.
Spread seasoned meat into a greased 7-quart crock pot.
Top with potatoes, baby carrots, and chopped yellow onion.
In a bowl, whisk cream of celery soup and ketchup until combined. Pour sauce over layered ingredients in the crock pot.
Cover and cook on low for 8-10 hours or high for 4-5 hours until beef is tender and flavors meld.
Stir gently before serving.

Notes

Substitute ketchup with tomato sauce if preferred.
