Description

A delightful and moist dessert bursting with tropical flavors from crushed pineapple and shredded coconut, perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup unsweetened shredded coconut
  • 1 cup crushed pineapple, drained
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • Optional: cream cheese frosting for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. Combine the flour, sugar, baking soda, baking powder, and salt in a large bowl.
  3. Add the eggs, vegetable oil, vanilla extract, and sour cream to the dry ingredients and mix until well combined.
  4. Fold in the crushed pineapple and shredded coconut.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  8. Optionally, frost with cream cheese frosting before serving.

Notes

Make sure to drain the crushed pineapple well to avoid excess moisture in the cake. Room temperature eggs and sour cream help achieve a smoother batter.
