Ingredients
- 1 tablespoon unsalted butter
- 1 tablespoon all-purpose flour
- 1/2 cup chicken broth (or vegetable broth)
- 1/2 cup whole milk
- 1/4 cup finely diced celery
- 1/4 cup finely diced yellow onion
- 1 clove garlic, minced
- 4 ounces large shrimp, peeled, deveined, and cut into 1-inch pieces
- 4 ounces white fish fillets (like cod or haddock), cut into 1-inch chunks
- 1/2 teaspoon Old Bay seasoning (or a pinch of paprika, salt, and black pepper)
- Salt to taste
- Black pepper to taste
- 1 sheet frozen puff pastry, thawed
- 1 large egg, beaten (for egg wash)
- 2 tablespoons chopped green onions or chives, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Melt the butter in a medium saucepan over medium heat. Add the diced celery and onion, and cook until softened, about 3-5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Sprinkle the flour over the cooked vegetables and stir continuously for 1 minute to create a roux.
- Whisk in the chicken broth until smooth, then gradually add the milk, continuing to whisk to prevent lumps. Bring to a gentle simmer and let thicken for 3-5 minutes.
- Stir in the shrimp, white fish, and Old Bay seasoning. Cook for another 3-5 minutes, until shrimp turns pink and fish is opaque.
- Pour the seafood filling into two oven-safe ramekins or a small baking dish.
- Cut the thawed puff pastry into rounds and cover each ramekin.
- Brush the tops with the beaten egg wash.
- Bake for 15-20 minutes, until golden brown.
- Garnish with chopped green onions or chives before serving.
