Description

A rich and comforting creamy potato soup, perfect for chilly evenings, made with simple pantry staples and customizable toppings.

Ingredients

  • 4 Russet potatoes, peeled and cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 tablespoons butter
  • 1/4 cup flour
  • 4 cups chicken or vegetable broth
  • 2 cups milk or cream
  • Salt to taste
  • Pepper to taste
  • Optional: thyme, rosemary, or bay leaves
  • Optional toppings: cheese, chives, bacon bits, sour cream

Instructions

  1. Gather your ingredients and have them ready for cooking.
  2. Peel and chop the potatoes into small cubes.
  3. In a large pot, melt butter over medium heat, then add onions and garlic. Cook until onions are soft, about 5 minutes.
  4. Sprinkle flour over the cooked onions, stirring constantly for about 2 minutes.
  5. Slowly pour in the broth while stirring to prevent lumps. Add cubed potatoes and bring to a boil.
  6. Reduce heat and let it simmer until potatoes are tender, about 15-20 minutes.
  7. Blend the soup until smooth using an immersion blender.
  8. Return the blended soup to the pot, stir in milk or cream, and heat gently. Season with salt, pepper, and herbs to taste.
  9. Serve warm with your favorite toppings.

Notes

Use a good quality broth for the best flavor and adjust the consistency with milk or cream as desired. Consider adding vegetables like carrots or celery for added nutrition.
