A delightful salad that combines fresh green beans and tender potatoes with a creamy dressing, perfect for picnics, BBQs, and family gatherings.
Ingredients
- 1 lb green beans
- 2 cups potatoes, diced
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 tbsp Dijon mustard
- 1/2 cup red onion, chopped
- 1 tsp salt
- 1/2 tsp pepper
- Fresh herbs (e.g., dill or parsley), to taste
Instructions
- Cook the potatoes in salted water until tender, then drain and cool.
- Blanch the green beans in boiling water for a couple of minutes, then transfer to ice water to stop the cooking.
- In a large bowl, mix mayonnaise, sour cream, Dijon mustard, salt, and pepper.
- Add the cooled potatoes and green beans to the bowl.
- Chop the red onion and add to the mixture along with the fresh herbs.
- Toss everything together until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Make sure to use fresh green beans for best flavor. Adjust dressing amount to preference.
