Description

A delightful salad that combines fresh green beans and tender potatoes with a creamy dressing, perfect for picnics, BBQs, and family gatherings.


Ingredients

  • 1 lb green beans
  • 2 cups potatoes, diced
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tbsp Dijon mustard
  • 1/2 cup red onion, chopped
  • 1 tsp salt
  • 1/2 tsp pepper
  • Fresh herbs (e.g., dill or parsley), to taste


Instructions

  1. Cook the potatoes in salted water until tender, then drain and cool.
  2. Blanch the green beans in boiling water for a couple of minutes, then transfer to ice water to stop the cooking.
  3. In a large bowl, mix mayonnaise, sour cream, Dijon mustard, salt, and pepper.
  4. Add the cooled potatoes and green beans to the bowl.
  5. Chop the red onion and add to the mixture along with the fresh herbs.
  6. Toss everything together until well combined.
  7. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Make sure to use fresh green beans for best flavor. Adjust dressing amount to preference.
