A fresh and vibrant pasta salad combining sweet corn and creamy avocado, perfect for summer gatherings.
Ingredients
- 8 oz pasta (fusilli or penne)
- 1 cup fresh corn (cooked or grilled)
- 1 cup cherry tomatoes (halved)
- 1/2 red onion (diced)
- 1 avocado (diced)
- 1/4 cup cilantro (chopped)
- 1/4 cup lime juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooked pasta, corn, cherry tomatoes, red onion, and avocado.
- In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the pasta salad and toss to coat.
- Stir in the chopped cilantro. Serve chilled or at room temperature.
Notes
Customize with additional veggies or protein as desired. For best results, add avocado just before serving.
