Description

A fresh and vibrant pasta salad combining sweet corn and creamy avocado, perfect for summer gatherings.


Ingredients

  • 8 oz pasta (fusilli or penne)
  • 1 cup fresh corn (cooked or grilled)
  • 1 cup cherry tomatoes (halved)
  • 1/2 red onion (diced)
  • 1 avocado (diced)
  • 1/4 cup cilantro (chopped)
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked pasta, corn, cherry tomatoes, red onion, and avocado.
  3. In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to coat.
  5. Stir in the chopped cilantro. Serve chilled or at room temperature.

Notes

Customize with additional veggies or protein as desired. For best results, add avocado just before serving.
