Ingredients
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 8 tbsp unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup sweetened, shredded coconut
- 2 large eggs
- 1/4 cup key lime juice
- 1 lime, zest divided
- 2 tsp coconut extract
- 1/2 cup powdered sugar
Instructions
- Whisk together the flour, baking powder, and salt in a bowl. Set aside.
- Cream together the butter, sugar, and shredded coconut until fluffy.
- Add the eggs one at a time, mixing well after each addition. Incorporate the key lime juice, coconut extract, and half of the lime zest.
- Beat on medium-high for about one minute, scraping down the sides as needed.
- Reduce the mixer speed to low and gradually add the flour mixture until combined.
- Refrigerate the dough for about 20 minutes.
- Preheat your oven to 350°F (175°C) and line baking sheets.
- Combine powdered sugar and remaining lime zest in a bowl.
- Roll the dough into balls and coat in the powdered sugar mixture.
- Place on baking sheets, leaving space between each cookie. Bake for 12 to 15 minutes.
- Cool on the sheets for 5 minutes before transferring to a wire rack.
