Description

Delightful Coconut Key Lime Crinkle Cookies with a refreshing tropical flavor and zesty key lime essence.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 8 tbsp unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup sweetened, shredded coconut
  • 2 large eggs
  • 1/4 cup key lime juice
  • 1 lime, zest divided
  • 2 tsp coconut extract
  • 1/2 cup powdered sugar


Instructions

  1. Whisk together the flour, baking powder, and salt in a bowl. Set aside.
  2. Cream together the butter, sugar, and shredded coconut until fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Incorporate the key lime juice, coconut extract, and half of the lime zest.
  4. Beat on medium-high for about one minute, scraping down the sides as needed.
  5. Reduce the mixer speed to low and gradually add the flour mixture until combined.
  6. Refrigerate the dough for about 20 minutes.
  7. Preheat your oven to 350°F (175°C) and line baking sheets.
  8. Combine powdered sugar and remaining lime zest in a bowl.
  9. Roll the dough into balls and coat in the powdered sugar mixture.
  10. Place on baking sheets, leaving space between each cookie. Bake for 12 to 15 minutes.
  11. Cool on the sheets for 5 minutes before transferring to a wire rack.
