Description
A light and vibrant Chinese-American salad featuring crisp Napa cabbage, sweet mandarin oranges, and savory grilled chicken. Tossed with a honey-soy dressing, it offers a balance of textures and flavors enhanced by almonds, sesame seeds, and crunchy chow mein noodles.
Ingredients
4 cups shredded Napa cabbage (use pre-shredded if available)
3 cups chopped iceberg lettuce (substitute romaine or red cabbage)
2 cups cooked chicken (grilled or rotisserie options work)
1 cup raw or steamed carrots
11 oz mandarin oranges (use fresh or frozen drained)
1/3 cup thinly sliced green onions (adjust per preference)
1/2 cup uncooked chow mein noodles (uncook noodles; add crunch)
1/2 cup wanton strips (use frozen store-bought)
1/2 cup sliced almonds (pineapple substitute for tropical twist)
2 tablespoons toasted sesame seeds (omit for sesame-free diets)
2 tablespoons rice vinegar
2 tablespoons hoisin sauce (choose low-sodium if needed)
2 tablespoons peanut oil (replace with avocado or vegetable oil)
2 tablespoons soy sauce (use tamari for gluten-free)
1 tablespoon honey (swap with maple syrup or omit)
2 cloves minced garlic (fresh garlic maximizes flavor)
1 teaspoon peanut butter (omit if avoiding legumes)
1 teaspoon sesame seed oil (optional for extra nuttiness)
1 teaspoon ground ginger (fresh ginger grater provides zing)
Instructions
Preheat oven to 350°F (180°C)
Prepare the dressing by whisking rice vinegar, hoisin sauce, soy sauce, peanut oil, honey, minced garlic, ground ginger, and peanut butter in a bowl until smooth
Combine Napa cabbage, lettuce, carrots, mandarin oranges, green onions, chow mein noodles, wanton strips, almonds, and sesame seeds in a large bowl
Toss salad gently with the dressing until coated
Sprinkle sesame seeds on top for garnish
Serve immediately or chill for up to 1 hour
Notes
Use pre-cooked chow mein noodles to simplify preparation
Omit chicken for a vegetarian version (add tofu or edamame)
Adjust green onions to taste
For gluten-free option, use tamari instead of soy sauce
Optional: add toasted sesame oil for extra depth
Store leftovers in an airtight container in the refrigerator for up to 2 days
