Ingredients
- 3 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 1/2 cup molasses
- 1 teaspoon vanilla extract
- Royal icing for decoration
- Sprinkles (optional)
Instructions
- In a medium bowl, whisk together flour, baking soda, spices, and salt.
- In a large bowl, beat the butter and brown sugar together until fluffy. Then mix in the egg, molasses, and vanilla.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Divide the dough into two halves, wrap in plastic, and refrigerate for at least 120 minutes or overnight.
- Preheat oven to 350°F (175°C).
- Roll out the dough on a floured surface to 1/4 inch thick and cut out shapes with cookie cutters.
- Place on baking sheets and bake for 8-10 minutes.
- Let cool and decorate with royal icing and sprinkles as desired.
Notes
To keep cookies fresh, store in an airtight container at room temperature for up to a week. Can freeze unbaked dough or baked cookies.
