A hearty and flavorful twist on traditional chili, combining Cajun spices, chicken, shrimp, and andouille sausage for a cozy meal.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 cup andouille sausage, sliced
- 1 cup shrimp, peeled and deveined
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cans white beans, drained and rinsed
- 4 cups chicken broth
- 1 cup corn (frozen or fresh)
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- Olive oil
- Chopped green onions and cilantro for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened.
- Add the sliced andouille sausage and cook until browned.
- Add the chicken breasts and cook for a few minutes on each side until they are browned.
- Pour in the chicken broth, white beans, corn, and Cajun seasoning. Bring to a boil, then reduce heat and let simmer for about 15-20 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Add the shrimp and cook until just cooked through, about 5 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions and cilantro.
Notes
For a thicker chili, let it simmer longer. Adjust Cajun seasoning to taste. Consider adding bell peppers or zucchini for more vegetables.
