Description

A hearty and flavorful twist on traditional chili, combining Cajun spices, chicken, shrimp, and andouille sausage for a cozy meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup andouille sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup corn (frozen or fresh)
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • Olive oil
  • Chopped green onions and cilantro for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened.
  2. Add the sliced andouille sausage and cook until browned.
  3. Add the chicken breasts and cook for a few minutes on each side until they are browned.
  4. Pour in the chicken broth, white beans, corn, and Cajun seasoning. Bring to a boil, then reduce heat and let simmer for about 15-20 minutes.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Add the shrimp and cook until just cooked through, about 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped green onions and cilantro.

Notes

For a thicker chili, let it simmer longer. Adjust Cajun seasoning to taste. Consider adding bell peppers or zucchini for more vegetables.
