Description

A vibrant salad bursting with fresh blueberries, ripe peaches, and creamy feta cheese, perfect for any occasion.

Ingredients

  • 2 cups fresh blueberries
  • 2 ripe peaches, sliced
  • 1 cup crumbled feta cheese
  • 4 cups mixed greens
  • 1/4 cup chopped red onion
  • 1/4 cup chopped walnuts
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Start by rinsing the fresh blueberries under cold water, ensuring they are clean and free from any debris.
  2. Place the rinsed blueberries in a large mixing bowl, gently patting them dry with a clean kitchen towel if needed.
  3. Wash the two ripe peaches thoroughly, then slice them into wedges or thin slices, depending on your preference.
  4. Add the sliced peaches to the mixing bowl with the blueberries.
  5. Crumble the feta cheese into small, bite-sized pieces, and sprinkle it over the fruit in the bowl.
  6. Next, wash and dry the mixed greens thoroughly, then add them to the bowl with the blueberries, peaches, and feta.
  7. Chop the red onion into small, thin pieces, then sprinkle it over the salad mixture in the bowl.
  8. Roughly chop the walnuts into smaller pieces and scatter them over the top of the salad.
  9. In a separate small bowl, whisk together the honey, balsamic vinegar, olive oil, black pepper, and salt until well combined.
  10. Drizzle the dressing evenly over the salad, ensuring the mixture is coated with the dressing.
  11. Gently toss the salad ingredients together using salad tongs or two large spoons, making sure the fruit, feta, and dressing are evenly distributed.
  12. Taste the salad, and adjust the seasoning with a little more salt or pepper, if desired.
  13. Serve immediately, or refrigerate for up to an hour before serving for a slightly chilled salad.

Notes

For added flavor, consider grilling the peaches or adding fresh herbs.
