Ingredients
- 2 cups broccoli florets
- 8 ounces pasta (rotini or penne)
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup shredded carrots
- 1/2 cup feta cheese, crumbled
- 1/2 cup olives, sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside to cool.
- Combine the broccoli, cherry tomatoes, red onion, carrots, feta cheese, and olives in a large bowl.
- Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl.
- Add the cooled pasta to the vegetable mixture and pour the dressing over the top.
