Ingredients

1 pound boneless skinless chicken breasts (2 large)
2 medium sweet potatoes (peeled, diced into ½-inch cubes)
2 tablespoons olive oil
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon paprika
¼ teaspoon garlic powder
3 tablespoons BBQ sauce (halal/non-alcoholic)


Instructions

Preheat oven to 400°F (200°C)
Toss sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder
Spread on a baking sheet in single layer
Roast 25-30 minutes, flipping halfway
Toss first 20 minutes gently if overbrowning occurs
Season chicken breasts with salt and pepper
Arrange on the same baking sheet around sweet potatoes
