Ingredients
- 2 cups cooked chicken, shredded or diced
- 1 cup edamame, shelled
- 2 cups mixed salad greens (such as romaine, spinach, or kale)
- 1 cup bell peppers, thinly sliced
- 1 cup shredded carrots
- 1/2 cup red cabbage, shredded
- 1/4 cup green onions, chopped
- 1/4 cup sesame seeds
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey or maple syrup
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Combine the chicken, edamame, salad greens, bell peppers, carrots, red cabbage, green onions, and sesame seeds in a large bowl.
- Whisk together the peanut butter, soy sauce, rice vinegar, honey (or maple syrup), and sesame oil in a separate small bowl until smooth.
- Pour the dressing over the salad and toss until everything is well coated.
- Season with salt and pepper to taste.
- Serve immediately or refrigerate for meal prep.
