Description

A delicious and nutritious salad combining tender chicken with crispy vegetables, topped with a creamy peanut butter dressing.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cup edamame, shelled
  • 2 cups mixed salad greens (such as romaine, spinach, or kale)
  • 1 cup bell peppers, thinly sliced
  • 1 cup shredded carrots
  • 1/2 cup red cabbage, shredded
  • 1/4 cup green onions, chopped
  • 1/4 cup sesame seeds
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon sesame oil
  • Salt and pepper to taste


Instructions

  1. Combine the chicken, edamame, salad greens, bell peppers, carrots, red cabbage, green onions, and sesame seeds in a large bowl.
  2. Whisk together the peanut butter, soy sauce, rice vinegar, honey (or maple syrup), and sesame oil in a separate small bowl until smooth.
  3. Pour the dressing over the salad and toss until everything is well coated.
