Ingredients

  • 1 can of beans (e.g., chickpeas or cannellini beans)
  • 1 jar of Castelvetrano olives, pitted and sliced
  • 1 cup of artichoke hearts, drained and chopped
  • 1/4 cup of olive oil
  • 2 tablespoons of lemon juice
  • 2 cloves of garlic, minced
  • 2 teaspoons of za’atar seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large bowl, combine the beans, olives, and artichokes.
  2. In a small bowl, whisk together the olive oil, lemon juice, garlic, za’atar, salt, and pepper to create the dressing.
