Ingredients
- 1 can of beans (e.g., chickpeas or cannellini beans)
- 1 jar of Castelvetrano olives, pitted and sliced
- 1 cup of artichoke hearts, drained and chopped
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- 2 cloves of garlic, minced
- 2 teaspoons of za’atar seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large bowl, combine the beans, olives, and artichokes.
- In a small bowl, whisk together the olive oil, lemon juice, garlic, za’atar, salt, and pepper to create the dressing.
