Ingredients
- 2 cups wild mushrooms, chopped
- 1 large onion, thinly sliced
- 2 cups kale, chopped
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional: fresh herbs for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the sliced onion and cook until caramelized, about 10-15 minutes.
- Stir in the minced garlic and mushrooms, cooking for an additional 5 minutes.
- Add the chopped kale and vegetable broth, bringing to a boil.
- Reduce heat and let simmer for 20 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs if desired.
Notes
