Ingredients

  • 2 cups wild mushrooms, chopped
  • 1 large onion, thinly sliced
  • 2 cups kale, chopped
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: fresh herbs for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the sliced onion and cook until caramelized, about 10-15 minutes.
  3. Stir in the minced garlic and mushrooms, cooking for an additional 5 minutes.
  4. Add the chopped kale and vegetable broth, bringing to a boil.
  5. Reduce heat and let simmer for 20 minutes.
  6. Season with salt and pepper to taste.
