Ingredients

  • 4 cups shredded cooked chicken (rotisserie or leftover)
  • 1 cup cauliflower rice (fresh or frozen)
  • 1 cup diced jalapeños (fresh or canned, to taste)
  • 1 cup Whole30-approved buffalo sauce
  • 1 can (15 oz) coconut milk (full-fat for creaminess)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a casserole dish.
  2. In a large mixing bowl, combine the shredded chicken, cauliflower rice, diced jalapeños, buffalo sauce, coconut milk, garlic powder, onion powder, smoked paprika, and salt and pepper. Mix well until combined.
