Ingredients
- 4 cups shredded cooked chicken (rotisserie or leftover)
- 1 cup cauliflower rice (fresh or frozen)
- 1 cup diced jalapeños (fresh or canned, to taste)
- 1 cup Whole30-approved buffalo sauce
- 1 can (15 oz) coconut milk (full-fat for creaminess)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a casserole dish.
- In a large mixing bowl, combine the shredded chicken, cauliflower rice, diced jalapeños, buffalo sauce, coconut milk, garlic powder, onion powder, smoked paprika, and salt and pepper. Mix well until combined.
- Pour the mixture into the prepared casserole dish.
- Bake in the preheated oven for 25-30 minutes, or until heated through and the top is lightly golden.
