Description
A healthy and delicious cabbage soup that’s low in calories, perfect for weight loss and easy to prepare in one pot.
Ingredients
- 1 medium head of cabbage, chopped
- 1 large onion, chopped
- 3 carrots, sliced
- 3 celery stalks, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- In a large pot, sauté onion, garlic, carrots, celery, and bell pepper until softened.
- Add chopped cabbage and continue to cook for a few minutes.
- Stir in the diced tomatoes, vegetable broth, thyme, oregano, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and simmer for about 30 minutes, until all vegetables are tender.
- Adjust seasoning to taste and serve warm.
Notes
Chop vegetables into similar sizes for even cooking. You can add other vegetables or proteins for variation.
