Description

A healthy and delicious cabbage soup that’s low in calories, perfect for weight loss and easy to prepare in one pot.


Ingredients

  • 1 medium head of cabbage, chopped
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • Salt and pepper to taste


Instructions

  1. In a large pot, sauté onion, garlic, carrots, celery, and bell pepper until softened.
  2. Add chopped cabbage and continue to cook for a few minutes.
  3. Stir in the diced tomatoes, vegetable broth, thyme, oregano, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat and simmer for about 30 minutes, until all vegetables are tender.
  5. Adjust seasoning to taste and serve warm.

Notes

Chop vegetables into similar sizes for even cooking. You can add other vegetables or proteins for variation.
