Ingredients
- 2 eggs
- 1/4 cup bell peppers, diced
- 1/4 cup onions, diced
- 1/4 cup spinach, chopped
- 1/4 cup tomatoes, diced
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a bowl, whisk the eggs with salt and pepper until well blended.
- Heat olive oil in a skillet over medium heat.
- Add the diced onions and bell peppers to the skillet, sautéing until softened.
- Stir in the spinach and tomatoes, cooking until the spinach is wilted.
- Pour the whisked eggs over the veggies in the skillet. Allow it to cook until set, then carefully flip to cook the other side.
- Serve hot on a plate and enjoy!
