Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 4 (8 ounce) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
- Add vanilla extract and mix until combined.
- Add eggs, one at a time, mixing until just combined.
- Pour the cream cheese mixture over the crust.
- Bake for 50-60 minutes, or until the center is set and the edges are lightly golden.
- Remove from the oven and let cool at room temperature, then refrigerate for at least 4 hours or overnight.
- Before serving, mix sour cream with a bit of sugar and spread on top for an additional layer of creaminess.
Notes
Make sure the cream cheese is at room temperature for a smooth batter. Let the cheesecake cool completely before refrigerating.
