A simple, delicious chicken recipe made with only two ingredients, perfect for busy weeknights.
Ingredients
- 8-10 chicken thighs and/or drumsticks (bone-in, skin on)
- 2 cups of your favorite BBQ sauce
- 2 tablespoons extra-virgin olive oil (or canola oil)
Instructions
- Preheat the oven to 400 degrees F.
- Coat the chicken on all sides with olive oil, seasoning with salt and pepper.
- Arrange the chicken skin-side down on a rimmed baking sheet and bake for 25 minutes.
- Increase the oven temperature to 425 degrees F and remove the chicken.
- Baste the top with BBQ sauce and flip the chicken gently; baste the other side with sauce.
- Return the chicken to the oven for another 7 minutes, then repeat basting and baking for a total of three intervals.
- Check the chicken’s internal temperature; it should reach at least 165 degrees F.
- BROIL if desired for extra crispiness, keeping an eye on it for burning.
- Rest for 5 minutes before serving.
Notes
For deeper flavor, consider marinating the chicken in BBQ sauce before cooking. Use high-quality BBQ sauce for the best results.
