Description

A simple, delicious chicken recipe made with only two ingredients, perfect for busy weeknights.


Ingredients

  • 8-10 chicken thighs and/or drumsticks (bone-in, skin on)
  • 2 cups of your favorite BBQ sauce
  • 2 tablespoons extra-virgin olive oil (or canola oil)


Instructions

  1. Preheat the oven to 400 degrees F.
  2. Coat the chicken on all sides with olive oil, seasoning with salt and pepper.
  3. Arrange the chicken skin-side down on a rimmed baking sheet and bake for 25 minutes.
  4. Increase the oven temperature to 425 degrees F and remove the chicken.
  5. Baste the top with BBQ sauce and flip the chicken gently; baste the other side with sauce.
  6. Return the chicken to the oven for another 7 minutes, then repeat basting and baking for a total of three intervals.
  7. Check the chicken’s internal temperature; it should reach at least 165 degrees F.
  8. BROIL if desired for extra crispiness, keeping an eye on it for burning.
  9. Rest for 5 minutes before serving.

Notes

For deeper flavor, consider marinating the chicken in BBQ sauce before cooking. Use high-quality BBQ sauce for the best results.
