Description
A creamy, cheesy casserole made with mashed russet potatoes, sour cream, cheddar cheese, and bacon bits, perfect for a comforting meal or side dish.
Ingredients
- 2 lbs russet potatoes
- 1 cup sour cream
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup bacon bits
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Wash and peel the potatoes, then cut them into cubes.
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain and mash the potatoes in a large bowl.
- Stir in sour cream, milk, cheddar cheese, bacon bits, green onions, salt, and pepper until well combined.
- Transfer the mixture into a baking dish and spread evenly.
- Sprinkle the remaining cheddar cheese on top.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool slightly before serving.
Notes
For a dairy-free version, substitute sour cream and milk with non-dairy alternatives. You can also replace bacon with smoked turkey or plant-based bacon. Allow the casserole to rest for 5-10 minutes before serving for better slicing.
