Description

A comforting dish featuring creamy butter beans with a medley of aromatics and vegetables, perfect for any occasion.


Ingredients

  • 2 cans butter beans, drained and rinsed
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 tsp crushed red pepper flakes
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • 1 tbsp fresh basil, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 lemon, zested and juiced


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for another 1-2 minutes until fragrant.
  3. Stir in cherry tomatoes and crushed red pepper flakes. Cook for about 4-5 minutes until tomatoes soften.
  4. Add butter beans and stir well to combine.
  5. Pour in vegetable broth, bring to a gentle simmer, and cook for about 5 minutes.
  6. Stir in heavy cream and grated Parmesan cheese, simmer for another 3-4 minutes until thickened.
  7. Season with salt and pepper. Adjust consistency with more vegetable broth if needed.
  8. Remove from heat and stir in basil, parsley, lemon zest, and lemon juice.
  9. Serve warm, garnished with more Parmesan and herbs if desired.

Choose fresh herbs and high-quality Parmesan for best flavor. Adjust the heat with more red pepper flakes if desired.
