Ingredients
- 1 lb ground turkey
- 1 can (15 oz) pumpkin puree
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups diced potatoes
- 1 cup diced carrots
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup heavy cream
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and garlic, and sauté until softened.
- Stir in ground turkey and cook until browned.
- Add diced potatoes and carrots, mixing well.
- Pour in chicken broth and add thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 20 minutes or until vegetables are tender.
- Stir in pumpkin puree and heavy cream, and cook for another 5 minutes.
- Serve warm in bowls, optionally garnished with fresh herbs.
Notes
For extra flavor, consider adding a pinch of cayenne pepper or diced bell peppers. Use pre-cooked turkey or rotisserie chicken for a quicker meal.
