Description

A cozy and hearty turkey pumpkin stew perfect for cooler weather, combining nutritious ingredients like ground turkey, pumpkin, and vegetables.


Ingredients

  • 1 lb ground turkey
  • 1 can (15 oz) pumpkin puree
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups diced potatoes
  • 1 cup diced carrots
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup heavy cream
  • 2 tbsp olive oil


Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and garlic, and sauté until softened.
  2. Stir in ground turkey and cook until browned.
  3. Add diced potatoes and carrots, mixing well.
  4. Pour in chicken broth and add thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 20 minutes or until vegetables are tender.
  6. Stir in pumpkin puree and heavy cream, and cook for another 5 minutes.
  7. Serve warm in bowls, optionally garnished with fresh herbs.

Notes

For extra flavor, consider adding a pinch of cayenne pepper or diced bell peppers. Use pre-cooked turkey or rotisserie chicken for a quicker meal.
