Description

A refreshing blend of coconut and tropical juices, perfect for warm days and gatherings.


Ingredients

  • Two 13.5 ounce cans full fat coconut cream
  • 1 teaspoon pure vanilla extract
  • 6 cups unsweetened pineapple juice, chilled
  • 1 cup fresh orange juice, chilled
  • 1/2 cup fresh lime juice, chilled
  • 1/2 cup simple syrup, or more to taste
  • 4 to 6 cups sparkling water, club soda, or lemon-lime soda, chilled
  • Plenty of ice for serving
  • Fresh pineapple wedges or spears for garnish
  • Maraschino cherries or fresh cranberries for garnish
  • Fresh mint sprigs for garnish
  • Toasted coconut flakes (optional for garnish)
  • Lime slices or wheels for garnish


Instructions

  1. Scoop all the coconut cream into a large punch bowl or pitcher. Add the vanilla extract and whisk until smooth.
  2. Slowly pour in the chilled pineapple juice while whisking gently.
  3. Carefully add the orange and lime juices, whisking until combined.
  4. Add simple syrup gradually, tasting to adjust sweetness.
  5. Refrigerate the mixture for 1 to 2 hours if not serving immediately.
  6. Just before serving, mix in the chilled sparkling beverage.
  7. Fill glasses with ice, pour the punch over, and garnish each with pineapple, cherries, mint, toasted coconut, and lime.

Notes

Chill all ingredients before mixing for a refreshing punch. Adjust the sweetness to your preference.
