Ingredients

  • 1-1.5 lbs Ground beef or turkey
  • 3-4 cups Diced potatoes
  • 1 (10.5 oz) can Cream of mushroom soup
  • 2-3 cups Frozen mixed vegetables
  • 1 cup Seasoned breadcrumbs


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium-high heat, breaking it up as it cooks. Drain any excess fat.
  3. Add diced onions and minced garlic, and sauté until translucent, about 5-7 minutes.
  4. Sprinkle in all-purpose flour and stir to create a roux, cooking for an additional 2-3 minutes.
  5. Gradually pour in chicken broth, stirring constantly, and bring to a simmer to thicken.
  6. Add frozen mixed vegetables, cream of mushroom soup, and season with salt and pepper. Stir to combine.
  7. Transfer to a 9×13-inch baking dish, top with shredded cheese and crushed potato chips.
  8. Bake for 30-35 minutes until cheese is melted and the top is golden brown.
  9. Let sit for 5-10 minutes before serving.
