Delight in these Thai Peanut Chicken Wraps featuring tender chicken and a creamy, zesty peanut sauce. Perfect for a quick lunch or party appetizer.


Ingredients

  • 2 cooked chicken breasts, shredded
  • 4 large tortillas or wraps
  • 1 cup shredded carrots
  • 1 cup red bell pepper, sliced
  • 1 cup cucumber, sliced
  • 1/2 cup red onion, thinly sliced
  • 1 cup fresh cilantro leaves
  • 1/2 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste


Instructions

  1. In a bowl, mix the peanut butter, soy sauce, honey, rice vinegar, lime juice, garlic, and ginger until smooth. Adjust seasoning with salt and pepper as desired.
  2. Lay the tortillas flat and spread a spoonful of the peanut sauce onto each one.
  3. In the center of each tortilla, layer with shredded chicken, carrots, bell pepper, cucumber, red onion, and fresh cilantro.
  4. Fold the sides of the tortilla over the filling and then roll tightly from the bottom to the top.
  5. Slice in half and serve with extra peanut sauce if desired.
