Ingredients
- 2 cooked chicken breasts, shredded
- 4 large tortillas or wraps
- 1 cup shredded carrots
- 1 cup red bell pepper, sliced
- 1 cup cucumber, sliced
- 1/2 cup red onion, thinly sliced
- 1 cup fresh cilantro leaves
- 1/2 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey or maple syrup
- 1 tablespoon rice vinegar
- 1 tablespoon lime juice
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
Instructions
- In a bowl, mix the peanut butter, soy sauce, honey, rice vinegar, lime juice, garlic, and ginger until smooth. Adjust seasoning with salt and pepper as desired.
- Lay the tortillas flat and spread a spoonful of the peanut sauce onto each one.
- In the center of each tortilla, layer with shredded chicken, carrots, bell pepper, cucumber, red onion, and fresh cilantro.
- Fold the sides of the tortilla over the filling and then roll tightly from the bottom to the top.
- Slice in half and serve with extra peanut sauce if desired.
