Description

A delightful and simple butter chicken recipe featuring tender chicken in a rich garlic butter sauce, perfect for busy weeknights.


Ingredients

  • 4 skinless chicken breasts or thighs, boneless
  • 4 cloves garlic, minced
  • 1 cup chicken stock
  • 4 tablespoons butter, divided
  • 1 teaspoon dried parsley
  • A pinch of salt and freshly ground black pepper
  • 2 tablespoons honey
  • 1 teaspoon paprika
  • Optional: caramelized onions for garnish
  • Optional: shredded Monterey Jack or cheddar cheese


Instructions

  1. Sprinkle salt, black pepper, and paprika evenly over both sides of the chicken pieces.
  2. Heat a large pan over medium heat and add 2 tablespoons of butter to melt.
  3. Place the chicken in the pan and cook for about 5-6 minutes on each side until fully cooked and browned. Remove chicken from pan and set aside.
  4. In the same pan, melt the remaining 2 tablespoons of butter. Add minced garlic and cook for 30-60 seconds until fragrant.
  5. Pour in chicken stock and honey, scraping any browned bits off the bottom of the pan to mix into the sauce.
  6. Return chicken to the pan, spooning sauce over them, and cook uncovered for 5-7 minutes until sauce thickens.
  7. If using cheese, sprinkle it on top and cover briefly to let it melt.
  8. Sprinkle dried parsley over chicken and sauce; if desired, add caramelized onions.

Notes

For the best flavor, scrape up the browned bits from the pan, and consider adding fresh herbs or spices for variation.
