Description

A quick and delicious teriyaki chicken bowl featuring tender chicken, vibrant veggies, and a delightful sauce ready in under 30 minutes.


Ingredients

  • 1 ½ lb boneless, skinless chicken thighs
  • 1 cup teriyaki sauce
  • 1 tablespoon vegetable oil
  • 2 cups cooked white rice
  • 2 cups broccoli florets, steamed
  • 1 cup shredded carrots
  • 1 ripe avocado, sliced
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds


Instructions

  1. Heat the vegetable oil in a skillet over medium-high heat.
  2. Add the chicken thighs to the skillet and cook for about 4–5 minutes per side until fully cooked and slightly crispy.
  3. Pour the teriyaki sauce over the chicken and simmer for 2–3 minutes until it thickens and becomes glossy.
  4. Remove the chicken from heat and slice it into strips.
  5. In a small bowl, mix the mayonnaise, sriracha, and sesame oil to create a spicy mayo.
  6. Assemble the bowls by adding the cooked rice, steamed broccoli, shredded carrots, and sliced avocado to each bowl.
  7. Top with the sliced teriyaki chicken, drizzle the spicy mayo over, and sprinkle with sesame seeds before serving.

Notes

Use high-quality teriyaki sauce for the best flavor. Don’t overcook the veggies to maintain texture and nutrients.
