Ingredients
• 2 cups cooked lake trout, flaked
• 1 egg
• 1/2 cup breadcrumbs
• 1 tbsp chopped dill
• 1 tsp lemon zest
• Salt and pepper to taste
• Olive oil for frying
Instructions
1. Mix trout, egg, breadcrumbs, dill, lemon zest, salt and pepper in a bowl.
2. Shape into small patties.
3. Chill in the fridge for 30 minutes.
4. Heat oil in skillet over medium heat.
5. Fry cakes 3-4 minutes per side until golden.
6. Drain on paper towels and serve.
Notes
Use fresh trout for best flavor.
Can substitute breadcrumbs with oat flour for gluten-free option.
