Description

A delightful dish combining BBQ sauce and honey with penne, perfect for quick weeknight dinners.


Ingredients

  • 12 oz (about 3 cups) penne pasta
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • Salt and pepper to taste
  • 1 cup honey BBQ sauce
  • 1/4 cup honey
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley for garnish


Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Season the chicken pieces with salt and pepper. Add to the skillet and cook until golden brown and cooked through, about 6-8 minutes. Remove chicken and set aside.
  4. In the same skillet, reduce the heat and add minced garlic. Sauté for about 1 minute until fragrant.
  5. Add honey BBQ sauce, honey, soy sauce, apple cider vinegar, smoked paprika, onion powder, and cayenne pepper. Stir to combine and let simmer for 2-3 minutes.
  6. Return cooked chicken to skillet, coat with sauce, and cook for another 2 minutes.
  7. Add cooked penne to the skillet, toss to combine.
  8. Sprinkle mozzarella cheese over the mixture, cover and cook on low heat until cheese melts, about 3-5 minutes.
  9. Garnish with chopped parsley and serve hot.

Notes

Feel free to adjust the cayenne pepper for heat preference. You can substitute chicken with chickpeas for a vegetarian version.
