A delightful dish combining BBQ sauce and honey with penne, perfect for quick weeknight dinners.
Ingredients
- 12 oz (about 3 cups) penne pasta
- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- Salt and pepper to taste
- 1 cup honey BBQ sauce
- 1/4 cup honey
- 1 tablespoon soy sauce
- 2 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley for garnish
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat.
- Season the chicken pieces with salt and pepper. Add to the skillet and cook until golden brown and cooked through, about 6-8 minutes. Remove chicken and set aside.
- In the same skillet, reduce the heat and add minced garlic. Sauté for about 1 minute until fragrant.
- Add honey BBQ sauce, honey, soy sauce, apple cider vinegar, smoked paprika, onion powder, and cayenne pepper. Stir to combine and let simmer for 2-3 minutes.
- Return cooked chicken to skillet, coat with sauce, and cook for another 2 minutes.
- Add cooked penne to the skillet, toss to combine.
- Sprinkle mozzarella cheese over the mixture, cover and cook on low heat until cheese melts, about 3-5 minutes.
- Garnish with chopped parsley and serve hot.
Notes
Feel free to adjust the cayenne pepper for heat preference. You can substitute chicken with chickpeas for a vegetarian version.
