Description

A delightful and refreshing fruit salad featuring mandarin oranges, Fuji apples, and pomegranates, enhanced with a warm cinnamon vanilla dressing.


Ingredients

  • 10 Cuties mandarin oranges
  • 4 Fuji apples
  • 2 pomegranates
  • 1 cup granulated sugar
  • 1 cup water
  • 2 cinnamon sticks
  • 1 vanilla bean, split


Instructions

  1. Segment the mandarin oranges by slicing off the ends, removing all peel and pith. Carefully slice between the membranes to release individual segments. Set aside.
  2. Core and dice the Fuji apples into bite-sized pieces. Optionally, toss them with a splash of lemon juice to prevent browning.
  3. Carefully remove the arils from the pomegranates. Score the pomegranate around its equator, pull it apart, and tap the back with a heavy spoon to release the arils.
  4. In a small saucepan, combine granulated sugar, water, cinnamon sticks, and the split vanilla bean (scrape seeds into the liquid, add the pod too). Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Simmer for 5-7 minutes, then remove from heat and let cool completely, allowing flavors to steep.
  5. In a large mixing bowl, gently combine the prepared mandarin orange segments, diced apples, and pomegranate arils.
  6. Once the cinnamon vanilla syrup has cooled, remove the cinnamon sticks and vanilla bean. Pour the syrup over the fruit and gently toss until all fruit is evenly coated.
  7. Cover the fruit salad and refrigerate for at least 30 minutes to allow the flavors to meld and chill thoroughly.
  8. Serve cold.

Notes

For added texture, consider including nuts like walnuts or pecans. Customize with other winter fruits like pears or cranberries for added flavor.
