Description

A flavorful and nutritious Sweet Potato Taco Bowl packed with roasted sweet potatoes, seasoned ground beef, and vibrant toppings.


Ingredients

  • 1 large sweet potato, peeled and cubed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • ½ lb ground beef (or turkey/lentils)
  • 1 tbsp taco seasoning
  • ½ cup pico de gallo
  • ¼ cup guacamole
  • 2 tbsp sour cream (or dairy-free alternative)


Instructions

  1. Preheat your oven to 425°F (220°C). Toss the cubed sweet potato with olive oil, smoked paprika, salt, and pepper until evenly coated. Spread them out in a single layer on a sheet pan. Roast for 15 minutes, then flip the pieces and roast for an additional 10-15 minutes, or until they are golden and tender.
  2. In a skillet over medium heat, brown the ground beef until it’s cooked through. Once done, add the taco seasoning and 2 tablespoons of water to the skillet. Simmer for 2-3 minutes, or until the mixture thickens and is well combined.
  3. Take your bowls and divide the roasted sweet potatoes evenly. Top each bowl with the cooked beef, scoop of pico de gallo, guacamole, and a dollop of sour cream. Garnish with fresh cilantro or lime wedges if desired.
