Description
A warm and hearty breakfast bake packed with nutritious sweet potatoes, turkey sausage, and fresh vegetables. Perfect for busy mornings and can be made ahead of time.
Ingredients
- 3 garlic cloves, minced
- 1 lb uncooked turkey sausage
- 5 cups sweet potatoes, cubed (1-inch)
- 1 green bell pepper, diced
- 1/2 large yellow onion, finely diced
- 2 tbsp avocado oil (or olive oil)
- 10 large eggs
- 1/2 cup whole milk (or plant-based alternative)
- 1/2 cup grated mozzarella cheese
- 1 tsp salt
- 1 tsp dried thyme
- 1/2 tsp black pepper
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large pan, heat the oil and add the sweet potatoes, onion, and bell pepper. Cook for about 8–9 minutes until softened. Stir in the garlic near the end.
- Transfer the cooked vegetables to the greased baking dish.
- In the same pan, cook the turkey sausage until browned and fully cooked, breaking it into small pieces. Add this to the baking dish and mix well with the vegetables.
- In a bowl, whisk together the eggs, milk, mozzarella cheese, salt, pepper, and thyme until thoroughly combined.
- Pour the egg mixture over the contents in the baking dish and gently stir to distribute evenly.
- Bake uncovered for 40–45 minutes or until the center is firm. Cover with foil if the top is browning too quickly.
- Let the casserole rest for 10–15 minutes before slicing and serving.
