Description

A nourishing and delicious soup combining sweet potatoes and carrots with warm spices, perfect for any season.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 4 medium carrots, peeled and sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste
  • 1/4 cup coconut milk (optional)
  • Fresh cilantro for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the diced sweet potatoes, sliced carrots, ground cumin, ground ginger, salt, and pepper.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer until the vegetables are tender, about 20-25 minutes.
  6. Using an immersion blender, blend the soup until smooth.
  7. Stir in coconut milk if using.
  8. Adjust seasoning as needed and serve hot, garnished with fresh cilantro.

Notes

This soup pairs well with crusty bread or a light salad. For extra nutrition, consider adding a handful of spinach or kale.
