Description
A nourishing and delicious soup combining sweet potatoes and carrots with warm spices, perfect for any season.
Ingredients
- 2 large sweet potatoes, peeled and diced
- 4 medium carrots, peeled and sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon ground ginger
- Salt and pepper to taste
- 1/4 cup coconut milk (optional)
- Fresh cilantro for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced sweet potatoes, sliced carrots, ground cumin, ground ginger, salt, and pepper.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer until the vegetables are tender, about 20-25 minutes.
- Using an immersion blender, blend the soup until smooth.
- Stir in coconut milk if using.
- Adjust seasoning as needed and serve hot, garnished with fresh cilantro.
Notes
