Description

Ingredients

  • 2 chicken breasts, diced
  • 1 cup sweet chili sauce
  • 1 tablespoon oil (like olive oil or vegetable oil)
  • 1 medium bell pepper, sliced (any color)
  • 1 cup shredded lettuce
  • 1 carrot, grated
  • 4 large flour tortillas
  • Optional toppings: cilantro, chopped green onions, lime wedges


Instructions

  1. In a large skillet, heat the oil over medium-high heat.
  2. Add the diced chicken breasts and cook until browned, about 5-7 minutes.
  3. Pour in the sweet chili sauce, stirring well to coat the chicken. Let it simmer for another 2-3 minutes until the chicken is cooked through.
  4. While the chicken is cooking, prepare your vegetables. Slice the bell pepper, grate the carrot, and wash the lettuce.
  5. Warm the tortillas in a dry skillet or microwave for about 15 seconds until pliable.
  6. On each tortilla, layer the chicken mixture, bell peppers, carrots, and lettuce.
  7. Add any optional toppings, such as cilantro or green onions, if desired.
  8. Roll each tortilla tightly, folding in the sides as you go, to create a wrap.
  9. Slice in half and serve immediately or pack for lunch.
