Description

A quick and easy recipe that combines the tangy taste of vinegar and sugar with savory chicken, colorful bell peppers, and pineapple.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup bell peppers, chopped
  • 1 cup pineapple chunks
  • 1/2 cup onion, chopped
  • 1/2 cup ketchup
  • 1/4 cup vinegar
  • 1/4 cup sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste


Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add chicken pieces, season with salt and pepper, and cook until browned and cooked through.
  3. In a separate bowl, mix ketchup, vinegar, sugar, and soy sauce.
  4. Add bell peppers, pineapple, and onion to the skillet with the chicken.
  5. Pour the sauce over the chicken and veggies.
  6. In a small bowl, mix cornstarch with a little water to create a slurry. Add to the skillet and stir until the sauce thickens.
  7. Serve hot with rice or noodles.

Notes

For added flavor, marinate the chicken in soy sauce for about 30 minutes before cooking. You can also add other vegetables like broccoli for extra color.
