  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • Optional: crumbled feta cheese for garnish


Instructions

  1. Prepare the ingredients: Start by grilling or roasting your chicken if it isn’t already cooked. Dice it into bite-sized pieces. If you’re using canned corn, drain it well.
  2. Mix the base: In a large mixing bowl, combine the diced chicken, sweet corn, diced cucumber, and finely chopped red onion.
  3. Make the dressing: In a separate bowl, whisk together the mayonnaise, Greek yogurt, lime juice, chopped cilantro, smoked paprika, salt, and black pepper until smooth.
