Ingredients
- 2 cups grilled or roasted chicken, diced
- 1 cup sweet corn, grilled or canned
- 1 large cucumber, diced
- ½ cup red onion, finely chopped
- ½ cup mayonnaise
- 2 tablespoons Greek yogurt
- 1 tablespoon lime juice
- 1 tablespoon cilantro, chopped
- 1 teaspoon smoked paprika
- 1 teaspoon salt (to taste)
- ½ teaspoon black pepper
- Optional: crumbled feta cheese for garnish
Instructions
- Prepare the ingredients: Start by grilling or roasting your chicken if it isn’t already cooked. Dice it into bite-sized pieces. If you’re using canned corn, drain it well.
- Mix the base: In a large mixing bowl, combine the diced chicken, sweet corn, diced cucumber, and finely chopped red onion.
- Make the dressing: In a separate bowl, whisk together the mayonnaise, Greek yogurt, lime juice, chopped cilantro, smoked paprika, salt, and black pepper until smooth.
- Combine everything: Pour the dressing over the chicken mixture and stir gently until all the ingredients are well coated.
- Taste and adjust: Give your salad a taste and adjust the seasoning if needed.
- Chill: Allow the salad to chill in the fridge for at least 30 minutes before serving.
- Serve and garnish: Serve the salad in bowls or on a platter and garnish with crumbled feta cheese if desired.
Notes
Use fresh ingredients for the best flavor. You can adjust the creaminess by reducing mayonnaise and increasing yogurt.
