  • 1/3 cup feta cheese (crumbled)
  • 1 cup pecans (toasted, some chopped)


Instructions

  1. Combine the balsamic vinegar and honey (or brown sugar) in a small saucepan over medium heat.
  2. Allow the mixture to come to a gentle boil, then reduce the heat to low and simmer for 10 minutes or until it thickens slightly.
  3. Remove from heat and let it cool while you prepare the salad.
  4. Add the fresh baby spinach in a large mixing bowl.
