Description

A delightful salad combining fresh spinach and strawberries with crunchy walnuts and savory bacon, dressed in a creamy poppyseed dressing.


Ingredients

  • 10 ounces Baby Spinach Leaves or Mixed Greens
  • 6 Slices of Crispy Bacon (cut into bite-size pieces)
  • 1/4 Red Onion (thinly sliced)
  • 1 lb. Strawberries (sliced)
  • 3/4 cup Feta Cheese Crumbles
  • 3/4 cup Walnuts
  • 1/2 cup Mayonnaise
  • 3 Tablespoons Apple Cider Vinegar
  • 3 Tablespoons Sugar
  • 1 Tablespoon Grated Onion
  • 2 teaspoons Dijon Mustard
  • 1 Tablespoon Poppyseeds
  • Salt and Pepper to taste


Instructions

  1. Begin by cooking the bacon until it becomes crispy. Once cooked, allow it to cool and then cut it into bite-sized pieces.
  2. In a large salad bowl, combine the baby spinach or mixed greens, crispy bacon, thinly sliced red onion, sliced strawberries, feta cheese, and walnuts.
  3. In a separate bowl or a mixer bottle, mix together the mayonnaise, apple cider vinegar, sugar, grated onion, Dijon mustard, and poppyseeds.
  4. Add salt and pepper to taste to the dressing.
  5. When you’re ready to serve, toss the salad with the prepared dressing until everything is well coated.
