Ingredients

  • 500 g strawberries (fresh or frozen)
  • 50 g granulated sugar
  • 1 tablespoon water
  • 190 g all-purpose flour
  • 75 g natural cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 115 g unsalted butter (melted)
  • 100 g light-tasting oil
  • 100 g granulated sugar
  • 100 g brown sugar
  • 2 large eggs (room temperature)
  • 330 g milk (room temperature)
  • 250 g cream cheese (softened to room temperature)
  • 115 g unsalted butter (softened to room temperature)
  • 100 g powdered sugar
  • 70 g strawberry jam
  • 1 teaspoon vanilla extract
  • 200 g strawberries (finely diced)
  • 7 strawberries (halved, for decoration)


Instructions

  1. Make the Strawberry Jam: In a saucepan over medium heat, combine the strawberries, sugar, and water. Cook for about 10–15 minutes until the mixture thickens. Remove from heat and let cool.
  2. Prepare the Chocolate Cake: Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. In another large bowl, mix melted butter, oil, and both sugars until well combined. Add eggs and milk, mix until incorporated. Gradually add dry ingredients, mixing until smooth. Divide batter into pans and bake for 25–30 minutes, or until a toothpick comes out clean. Cool cakes for 10 minutes in pans, then transfer to a wire rack.
  3. Make the Strawberry Cream Cheese Frosting: Beat softened cream cheese and butter until smooth. Gradually add powdered sugar, then stir in strawberry jam, vanilla extract, and diced strawberries.
  4. Assemble the Cake: Once cakes are cool, place one layer on a serving plate and spread a generous amount of frosting on top. Add second layer, frost the entire cake, and garnish with halved strawberries.

For best results, ensure your ingredients are at room temperature. Chill the frosted cake before serving for easier slicing.
